Sourdough Graham Crackers

I created this recipe to go with the homemade marshmallows. We like to sit by the fire on winter nights and what better treat than a true homemade s'more? As I was making these, I had eaten graham crackers since childhood and I realized I didn't really know what the word graham meant by itself. So, what did I do? I looked it up. "denoting or made from wholewheat flour that has not been sifted". (Origin: mid 19th century: named after Sylvester Graham (1794-1851), an American advocate of dietary reform.) I noticed that many recipes didn't even call for whole wheat flour. So in creating this recipe, I didn't think I'd like 100% whole wheat, but I chose to put whole wheat in them.

Ingredients

For the Crackers:

  • 140 g Whole Wheat Flour

  • 140 g All-Purpose Flour

  • ½ tsp Sea Salt

  • ½ tsp Baking Soda

  • 1 ½ tsp Ground Cinnamon

  • 113 g Butter, (½ cup or one stick melted and cooled)

  • 100 g Honey

  • 100 g Dark Brown Sugar

  • 100 g Sourdough Discard, (½ cup, or active starter)

  • 1 tsp Vanilla Extract

  • Cinnamon & Sugar for sprinkling on top (optional)

Preparation Steps

1. In a mixing bowl, combine the flours, salt, baking soda, and cinnamon. Set aside.

2. In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter, honey, and dark brown sugar. Scrape the sides of the bowl to ensure the butter is completely incorporated. Pour in the sourdough discard and vanilla extract and mix for a couple of minutes until the mixture is fully combined.

3. Add the dry ingredients to the mixing bowl. Then, carefully combine and mix on low speed for a minute until no floury spots remain.

4. Divide the dough into two pieces. Flatten each with your hands into a rectangle about ¼ inch thick. Wrap each rectangle in plastic wrap. Chill the dough in the refrigerator for at least an hour and up to a few days to fully hydrate the flours, let the flavors meld, and make rolling it out easier.

5. Preheat the oven to 325ºF.

6. Use a rolling pin to roll out each piece of dough into an evenly thin ⅛" rectangle. Using a square cookie cutter, cut out your graham crackers. Finally, use a fork to poke holes a few times into each cracker. Sprinkle with cinnamon and sugar if desired.

7. Bake one sheet of crackers at a time in the middle rack for 18-20 minutes or until the edges begin to brown and the tops are dry to the touch. Cool completely on the pan.

NOTE
Homemade Sourdough Graham Crackers make the best gourmet s'mores and other graham cracker desserts! Pair them with homemade marshmallows for a gut healthy dessert.
