Chocolate Sourdough Graham Crackers

These chocolate sourdough discard graham crackers are a delightful twist on a standard sourdough discard graham cracker. They make a great double chocolate S'more, but an even better homemade ice cream sandwich. Simple and fun to make. Coat them in your favorite sprinkles to turn them into a festive summertime snack.

Ingredients

For the Crackers:

  • 140 g Whole Wheat Flour

  • 140 g All-Purpose Flour

  • 70 g Cocoa

  • ½ tsp Sea Salt

  • ½ tsp Baking Soda

  • 113 g Butter, (½ cup or one stick melted and cooled)

  • 100 g Honey

  • 150 g Dark Brown Sugar

  • 120 g Sourdough Discard, (½ cup +1 Tbsp, or active starter)

  • 1 tsp Vanilla Extract

Preparation Steps

1. In a mixing bowl, combine the flours, cocoa powder, salt and baking soda. Set aside.

2. In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter, honey, and dark brown sugar. Scrape the sides of the bowl to ensure the butter is completely incorporated. Pour in the sourdough discard and vanilla extract and mix for a couple of minutes until the mixture is fully combined.

3. Add the dry ingredients to the mixing bowl. Then, carefully combine and mix on low speed for a minute until no floury spots remain.

4. Divide the dough into two pieces. Flatten each with your hands into a rectangle about ¼ inch thick. Wrap each rectangle in plastic wrap. Chill the dough in the refrigerator for at least an hour and up to a few days to fully hydrate the flours, let the flavors meld, and make rolling it out easier.

5. Preheat the oven to 325ºF.

6. Use a rolling pin to roll out each piece of dough into an evenly thin ⅛" rectangle. Using a square cookie cutter, cut out your graham crackers. Finally, use a fork to poke holes a few times into each cracker.

7. Bake one sheet of crackers at a time in the middle rack for 18-20 minutes or until the edges begin to brown and the tops are dry to the touch. Cool completely on the pan.

NOTE
Homemade Sourdough Graham Crackers make the best gourmet s'mores and other graham cracker desserts! Pair them with ice cream and sprinkles and you have the best ice cream sandwich.
