Homemade Marshmallows

I really enjoyed making these. The process that went into to them was quite simple, But I never thought about how one would make a marshmallow before. After mixing, they were like a liquid marshmallow fluff and totally delicious. They set up quickly so pour them in the pan before you lick the beaters if you want them to look pretty!

Prep Time: 10 minutes

Cook Time: 8 minutes

Servings: 1 9x9 pan

Ingredients

For the Marshmallows:

  • 1 cup water, warm, divided

  • 1/4 cup gelatin powder (5 packets Knox, unflavored gelatin)

  • 1 cup honey (or real maple syrup) - I used maple syrup my sister-in-law made

  • 2 tsp vanilla (for taste)

Preparation Steps

1. Pour 1/2 cup of warm water into a bowl. Add the gelatin. Whisk slightly to incorporate and set aside.

2. Pour the other 1/2 cup of water and 1 cup of maple syrup, and vanilla extract into a small saucepan and whisk to combine.

3. Slowly bring the water and syrup mixture to a boil while stirring. Keep boiling, stirring constantly for 8 minutes.

4. Turn on mixer with water/gelatin mixture to medium speed and whisk while slowly pouring the syrup/water mixture into the mixing bowl.

5. Then turn the mixer to high and whisk for another 10-15 minutes or until it forms soft peaks like the consistency of marshmallow cream.

6. Add to any tray and let cool for 2-3 hours in the fridge.

7. Dust with powdered sugar or cornstarch. (I omitted this step).

8. Cut into squares and enjoy!


NOTE
These go great with homemade sourdough discard graham crackers and a slice of dark chocolate. Careful when roasting them – they don't melt, they don't melt and then they quite quickly become soup.
