Prep Time: 15 minutes

Cook Time: 3 min

Servings: 8 waffles

Ingredients

For the Waffles:

  • 235 g Flour, (1-3/4 cup)

  • 40 g Brown Sugar, (2 Tbsp)

  • 13 g Baking Powder, (1 Tbsp)

  • 1/8 tsp Sea Salt

  • 90 g Cream Cheese, 3 oz, softened

  • 2 Egg Yolks

  • 300 g Coconut Milk (or regular milk), (1.25 cup)

  • 100 g Sourdough starter/discard, (1/2 cup)

  • 26 g Oil, (2 Tbsp)

  • 2 Egg Whites

Preparation Steps

1. Combine flour, brown sugar, baking powder and salt.

2. In a mixing bowl beat cream cheese and egg yolks together until smooth. Stir in milk, sourdough starter and oil. Add to the flour mixture all at once. Stir until combined but still slightly lumpy.

3. Beat egg whites until stiff peaks form. Gently fold into flour and egg yolk mixture, leaving a few fluffs of egg whites in the batter do not overmix.

4. Pour about 1 cup of batter onto a preheated, lightly greased waffle iron. Close the lid quickly; do not open during baking. Bake 3-4 minutes. Use a fork to lift the waffle off the grid.

5. Serve with fresh fruit and whipped cream or syrup.

NOTE
Sourdough Cream Cheese Waffles will be one of your favorite breakfast treats! Serve as above, or add peanut butter, jelly or yogurt as toppings.
