There are many ways to cut your boule. None of them are incorrect, but some of them definitely have advantages.
Standard Cutting
This is probably the method used by most who haven't really had home-made sourdough that much. Just slice the bread starting at one end and go to the other slice by slice as needed. While this would ideally work great, often it is very hard to get your bread knife to make a smooth even slice without smooshing your bread or cutting your finger. Yes, this is the way commercial bread is sliced, but it is done with fancy automated bread slicers.
Have you ever seen all the loaves of bread on social media cut in half to show their crumb shot? Did you ever wonder why they went to the effort to score a beautiful loaf of bread, then cut it in half to ruin the design? Well, with a boule, if you slice it through the center first, then you can place it crumb side down on your cutting board and it's super simple to slice straight down and get a nice piece.
This is similar to the method above in which you slice your boule through the center first. Then slice it diagonally so the pieces are all more similar in size. A little more difficult than just slicing downwards, but now you aren't left wondering who gets the tiny pieces on the ends.
