Sourdough Discard Waffles

Fresh out of dinner ideas? Try these sourdough discard waffles. It's a great way to use up a bunch of discard and they freeze well, so when you need a last minute breakfast, grab one from the freezer an toast it. Perfect for breakfast, a quick snack or dinner time!
Prep Time: 10 minutes
Cook Time: 3 min each (18 minutes)
Servings: 6 Belgian waffles
For the Waffles:
4 eggs (or sub a flax egg)
113 g melted butter (8 tbsp)
2 tsp vanilla extract
50 g sugar (or other sweetener of your choice)
2 tsp cinnamon
Pinch of salt
2 tsp baking soda
Preparation Steps
1. Preheat your waffle iron.
2. In a large bowl, whisk together sourdough discard, eggs, melted butter, vanilla extract, sugar, cinnamon, and salt.
3. Add the baking soda and whisk vigorously. Within about 10 seconds, the batter will become aerated and fluffy—watch the magic happen!
4. Pour the waffle batter into your waffle iron. Sprinkle any add-ins on top, if desired. Cook the waffles in your waffle iron for 3-4 minutes. Enjoy!
NOTE
These waffles are crispy on the outside, soft on the inside, and packed with delicious sourdough flavor. They're also a great way to use up sourdough discard!
