Sourdough Discard Coconut Shrimp

I love coconut shrimp, but you often don't find it on a menu. Now I can make it myself at home!

For the Cookies:
ground coconut flakes
seasoning of choice
Preparation Steps
Set your sourdough discard out at room temp so it is easy to work with. It should be the texture of pancake batter. Thin with water or add flour to get it to that consistency. Add your choice of seasonings like Cajun, Nashville Hot, or Old Bay.
Get 3 plates or large, flat bowls. Fill one with flour, one with seasoned sourdough discard, and one with unsweetened ground coconut.
Peel and wash shrimp. Drain. Toss in flour bowl. Coat both sides with the discard. Roll in ground coconut.
Fry in a deep fryer or oil in a skillet for about 2 minutes per side. Drain on a paper towel.
Dip in sweet chili sauce, raspberry jelly, or shrimp sauce. Enjoy!
