Cheddar Cheese Crackers

These crackers are a great snack and they use up a lot of your discard. Be sure to use Extra Sharp Cheddar for a really cheesy taste. I made them with regular sharp cheddar once and they weren't nearly as good.

Prep Time: 10 minutes

Cook Time: 30 min

Servings: 30 crackers

Ingredients

For the Crackers:

  • 200 g Sourdough Starter (3/4 c), (active or not, room temp or fridge

  • 50 g Extra Sharp Cheddar (1/3 c), finely grated

  • 8 g Olive Oil, (2 tsp)

  • 2 g Salt, (1/4 tsp)

  • 1 g Dried Thyme, (1 tsp)

  • 1 g Black Pepper, (1/4 tsp)

  • Dash Cayenne Pepper

Preparation Steps

1. Preheat oven to 325º F and line a baking sheet with parchment paper.

2. Mix discard with oil and spices.

3. Stir in the cheese.

4. Spread thinly on a baking sheet covered with parchment paper.

5. Bake 10 min.

6. Score

7. Bake 20 min more or until the edges just start to brown. Watch them closely as they burn easily.

NOTE: You must use Extra Sharp Cheddar if you want them to be yummy!
