How to Make a Sourdough Sandwich Loaf

Make Your Own Moist, Delicious Sourdough Sandwich Loaf

I went in search of a simple loaf after a family member made a brick for his first loaf. I wanted to give him something simple to make. This is so easy, anyone can do it. All you need is a little patience for the bulk ferment.

Prep Time: 15 min plus proofing time

Cook Time: 30-40 min

Servings: 1 loaf

Ingredients

  • 400 g bread flour

  • 200 g water

  • 100 g active starter

  • 20 g local raw honey

  • 20 g olive oil

  • 8 g sea salt

Preparation Steps

1. Combine everything in a bowl and knead by hand or in a mixer using your dough hook until a soft, smooth dough forms.

2. Cover and let rest for 1 hour.

3. Do one set of stretch and folds, then rest another hour. (Do this 2 times total, including rest.)

4. Stretch the dough out on the counter to form a rectangle.

5. Roll up the dough so it forms a cylinder and place it seam side down in a greased bread pan.

6. Cover with plastic wrap.

7. Let it double in size on your counter.

8. Once doubled, place in the fridge for a few hours to overnight.

9. Preheat oven to 375º F. Score the dough with 5-6 diagonal slashes.

10. Bake for 30-40 minutes, until the top is a soft, golden brown and the bread has an internal temperature of 200º F.

11. Butter the top, remove from pan after 5-10 minutes and let cool completely before slicing.
