Sourdough Mini Cherry Pies

These little mini pies were a special request from my husband. They are great for after school snacks, desserts on game day or a special Valentine's Day treat! Throw them in you kids lunch for a healthier alternative to a Hostess pie.

Preparation Steps
1. In a medium-sized mixing bowl, whisk the flour, sugar and salt. Use a pastry cutter to cut the butter into the flour until it forms large crumbles.
2. Add the sourdough starter discard and vinegar to the mixture and use a fork to bring the dough together. Use your hands to bring the mixture into a cohesive ball and press into a round flat disc. (Add a teaspoon of cold water if the mixture is too dry.)
3. Flatten the dough and smooth the edges. Wrap the dough in plastic wrap and let the dough chill in the fridge for at least one hour. (Up to 24 hours)
4. In a small saucepan, combine sugar and corn starch for the filling. Using a wooden spoon, get it well-mixed. Add the cherry syrup. Bring to a boil for 1-2 minutes to thicken. Cool.
5. Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
6. Roll the dough out into a 1/8" thickness, on a lightly floured surface. Cut the dough into shapes using a cookie cutter. Use the thicker pieces as a base.
7. Using a spoon, place 3 cherries and some filling on each base piece. Take the top piece and stretch it in the center to fit over the cherries. Place on top of the cherries and press the edges together with a fork.
8. Brush the mini pies with the egg wash. Sprinkle with large decorative sugar.
9. Place the mini pies onto a baking sheet and bake for 25-30 minutes or until the crust is golden brown. Remove from the oven and transfer the baked mini pies to a cooling rack.
NOTE
Sourdough mini pies are so easy to make with sourdough pie crust. They’re fun to make and a cute little treat for Valentine’s Day!
