Sourdough Banana Bread

“This was one of our favorite recipes from Grandma Lorene.”

My husband converted this recipe to use up some sourdough discard. The taste was even moister and more delicious than the original! This was a staple recipe when my kids were toddlers. Now they get to enjoy the even healthier version as adults.

Prep Time: 10 minutes

Cook Time: 1 hour

Servings: 1 loaf

Ingredients

For the Banana Bread:

  •  1/2 cup Butter

  • 1 cup Sugar

  • 100 g sourdough discard

  • 2 Eggs

  • 1 tsp Vanilla

  • Pinch Salt

  • 3 Bananas, mashed

  • 1 Tbsp Sour Cream, (or banana yogurt)

  • 1 tsp Baking Soda

  • 2 cups Flour

  • 1/4 tsp Cinnamon

Preparation Steps

1. Preheat oven to 325º F.

2. Cream butter and sugar well.

3. Add the other ingredients in the order given.

4. Pour into a large loaf pan.

5. Bake for 1 hour or until a toothpick inserted in the middle comes out clean.

NOTE
You can use this recipe to make muffins instead of quick bread if you prefer. These are handy for on the go snacks.

Makes 18 muffins, but bake at 400° F for 20 min.
